Italian Herb Crackers


Hello! It sure has been a while. Life has been crazy! Extra hours at work, catering events, and so much more. But I’m back! And if you haven’t liked the Oh Dear Bakery facebook page (which you definitely should), you have yet to find out the big news! This summer, June through October, Oh Dear Bakery will have a booth at the Kerrytown Wednesday Night Farmers’ Market in Ann Arbor, Michigan. I’m absolutely thrilled to be a part of a farmers’ market for the first time, please come visit me! I’d love to hear any suggestions for items to have for sale, and if there are any market veterans out there, bring on the advice! Recently I’ve been scouring the internet for cute table set ups and packaging ideas. But now, on to some food.

Crackers! I’ve been wanting to make these for a while. What I really love about this recipe is you can alter it to satisfy whatever cracker craving you’re having – super thin and crunchy, thick and almost flat bread like, or somewhere in between. I chose the middle ground, my crackers still snap when you break them but they also have some density, a perfect vehicle for rich cheeses…

This recipe will require a good 45 minutes of your (almost) undivided attention. You’ll be making 3 cracker rounds one after the other in a very hot oven, so it feels a little like an assembly line. Just turn on your favorite podcast and go for it! If you don’t have a favorite podcast try mine – Good Job Brain. Yes, this podcast has beat out This American Life for my favorite, it is that great. Be prepared to learn things that will blow your mind while also laughing at potty humor like a 7-year-old boy, it’s amazing and their episodes are perfectly timed to cracker making!

Italian Herb Crackers

  • 1 3/4 cups AP flour
  • 1 Tbsp of your favorite italian herbs. I used fresh rosemary and dried basil, oregano and thyme.
  • 1 tsp baking powder
  • 3/4 tsp salt (this is always a guesstimate for me… I don’t think I’ve measured salt since 1999… that was also a guesstimate).
  • 1/2 cup water
  • 1/3 cup olive oil, plus a little more for brushing
  • a nice flakey sea salt for sprinkling

Preheat your oven to 450 degrees. Then stir together the flour, herbs, baking powder and salt and create a well in the middle of the bowl. Pour the water and oil into the well.


Stir the dry ingredients, oil and water into a dough and knead it 4 or 5 times on a clean surface to smooth it out.


Cut the dough into three equal pieces. You will work with one piece at a time, so keep the dough you are not working with wrapped in plastic wrap to prevent it from drying out.

Roll out the dough into a circle-ish shape about 10 inches in diameter on a piece of parchment and brush with oil then sprinkle with sea salt. Then slide the parchment onto a baking sheet.

DSC_0005Bake 9-10 minutes until golden brown. Then slide the whole parchment off the sheet and do it again!

DSC_0045Break the round into pieces and serve it with some delicious cheeses. Today, goat cheese really hit the spot for me.

DSC_0065Even though I think these little snacks are gorgeous (and would make a great gift!) I’ll admit it, Leroy is way prettier than my herb crackers…
