Puppy Pop! (Puppy Chow Popcorn)

I know, I cheated my own blog. This recipe does not call for anything going into the oven. But it is sooo freaking delicious I had to share it. I suppose if I really wanted to follow my own rules I could have melted the chocolate and peanut butter in the oven… But that would have just been silly.

I debated about what to call this one for a long time… Muddy Buddy Popcorn, Muddy Kernels, Poppy Puppy, Muddy Pop Chow… But Pete hated Puppy Pop, so of course that is what I had to call it.

This super easy recipe is really just an excuse to eat lots of chocolate and peanut butter. Most of the time I don’t actually need an excuse… But for those of you who do – popcorn is the perfect vehicle.

Puppy Pop!
1/2 cup popcorn kernels
3 Tbsp vegetable oil
1 cup chocolate chips (dairy-free for vegan version)
1/2 cup creamy peanut butter
1 tsp vanilla
2 cups powdered sugar

You’ll also need a large pot for popping popcorn and a gallon plastic bag or large tupperware for coating the chocolatiness in powdered sugar.

First, pop that corn!
Put the veggie oil in a large pot with the kernels. Turn the heat on high, then when the first kernel busts open put a lid on the pot and turn the heat down to medium. Take the pot off the heat when there are 3 seconds between pops.

Poppity pop pop pop!

In a microwave or double boiler melt together your chocolate chips and peanut butter. Stirring periodically until the mixture is creamy, then add in the vanilla.

Pour in the chocolate mixture, stirring gently with a spatula to coat.

Put 1 cup of powdered sugar in a platic bag or tupperware followed by half the chocolatey popcorn. Seal it and toss it around a bit then transfer to a large bowl. Repeat with the second half and the second cup of powdered sugar.

Then eat at least half of it in one sitting like we did…
